This month, Kitchionista celebrates the Japanese pub scenery. We have had this cookbook for a while and love all the recipes because it does not need an extravagant list of ingredients to make them. For instance, many of these recipes are dependable upon seasonal availability. Some pubs can create a special dish upon request as long as there are stocks on hand. This is a place for the working class to unwind after being in an office for more 10 hours. It is actually a bittersweet set-up because some of the employees do have families. Instead of going home to eat and unwind, they spend more time in the pubs with their co-workers. The cookbook was created by Mark Robinson who mainly intends to spread the izakaya food culture to the public. At the same time, share the delicious dishes he encountered during his visits to these establishments.
